How to celebrate caramel day with amazing caramel cake

5th April is celebrated throughout the world as caramel day. What could be a better way to celebrate this day than to enjoy a caramel cake. Nowadays, with all the online cake delivery sites available to us within our fingertips celebrating this day is rather easy. However if you decide to go a more traditional way to celebrate this day, you can make a caramel cake in your kitchen. Here what you will require for that-

12 tsp. salt

4 eggs

14 cups milk

16 tbsp. salted butter

14 cups sugar

2 tsp. vanilla extract

16 tbsp. unsalted butter, softened

14 cups cake flour

1 tbsp. baking powder

2 (12-oz.) cans evaporated milk

Process to make it

Heat your oven to around 350°. You must make sure that all ingredients are at room temperature. Then grease two 9″ round cake pans with 1 tbsp. of unsalted butter. Dust them with 1 12tbsp. flour & tap out the excess amount. Then set them aside.

The next step  is to mix flour, baking powder, and salt together. Then set it aside. Start to beat remaining unsalted butter along with 2 12 cups sugar in a bowl with an electric mixer until it is all fluffy.

Just add vanilla and eggs one at a time, while beating after each addition. Then add flour mixture along with milk alternately in 3 batches, beating it smooth after each such addition. Finally divide the batter between the pans. Bake them until they are golden in colour. That should take 30–35 minutes. Let it cool on a rack for about 10 minutes, then remove the cakes. You may slice tops off cakes in order to level them.

To make the icing, you need to cook the remaining sugar with salted butter in a pot over high heat, while stirring constantly, until it gets a light brown color. That should take roughly 7–8 minutes. Carefully stir it in evaporated milk with reduced heat preferably medium to low. Stir it constantly, until it is smooth, for about 8–10 minutes. Then stir it occasionally, until icing registers 240° on a candy thermometer, for about 1 12 hours. Then remove from heat & beat with a wooden spoon until it is thick, glossy, and spreadable after 20 to 25 minutes. At this stage a dollop dropped on a plate should be oozing only slightly. Ice bottom the layer of cake, then top it with second layer and ice the outside of the cake. Final step is easy. Just chill the cake until it sets.
